Note: I have not made this recipe as it was given to me since I became diabetic, however, I so hope to try it with some diabetic revisions one of these days. Here is the original.
3 eggs slightly beaten
2/3 cup Karo light or dark corn syrup
1 cup sugar
2 tbsp. Mazola margarine, melted
4 tbsp evaporated milk
1 tsp vanilla
2 tbsp. flour
1 1/2 cups pecans
1 unbaked pie shell
In a large bowl, stir together all the ingredients except the nuts and shell until well blended. Stir in the nuts. Pour into the pie shell and bake 350 degrees for 50-55 min. or until knife comes clean.
