MUSHROOM SOUP SLOPPY JOES

This recipe is from an old family friend.

1 lb. hamburger
1 can cream of mushroom soup
1/2 soup can water
1/2 cup catsup
diced peppers, mangoes* and onions
salt to taste

Brown hamburger in a skillet. Add diced peppers, mangoes, onions, and salt. Add the mushroom soup, water, and catsup. Cover and simmer for 15 minutes. Serve on hamburger buns.

*In Southern Indiana mangoes are green bell peppers.

FOOLED YOU HAM SALAD SANDWICHES

This recipe is from an old Hoosier cookbook. I, personally, prefer this over ham salad.

1 lb bologna
1/2 cup sweet pickle relish
1 cup mayonnaise-style salad dressing
1/2 dozen boiled eggs, finely chopped
1/2 cup finely chopped onion

Grind or finely chop the bologna. In a large bowl, combine the bologna, pickle relish, and onions. Add the salad dressing and eggs. Stir to combine well. This makes a great sandwich served on bread or split rolls with lettuce leaves.

WALNUT CHICKEN SPREAD

1 3/4 cups finely chopped cooked chicken

1 cup finely chopped walnuts

2/3 cup mayonnaise or salad dressing

1 celery rib, finely chopped

1 small onion, finely chopped

1 tsp salt (I suggest omitting)

1/2 tsp garlic powder

Assorted crackers for serving

In a bowl, combine all ingredients except crackers. Mix well. Serve with the crackers or may be used as a sandwich spread. if desired.

AWARD WINNING HONEY BBQ SHREDDED PORK

1 pork shoulder or picnic roast (remove visible fat)
1 1/4 cups ketchup
1 cup chopped celery
1 cup chopped onion
1/4 cup water
1/3 cup honey
2 tbsp lemon juice
3 tbsp white vinegar
3 tbsp Worcestershire sauce
2 tbsp dry mustard
1 tsp salt
1/2 tsp black pepper
Crusty rolls for serving
Place pork roast in a 9 x 13-inch baking pan. Combine remaining ingredients, except rolls. Pour mixture over the roast. Cover pan with foil and place in a preheated 300 degree oven for 3 to 3 1/2 hours. Shred the meat using two forks. Remove all the bone and skin. Stir meat with the sauce and serve in crusty rolls.
NOTE: For today's busy cooks, you can adapt this recipe by using a slow cooker while you are away from home or just to keep from using the oven.

MY LATE MOM'S BAKED HAMBURGERS


1 lb ground beef

1 egg

salt and pepper to taste

1/4 cup evaporated milk

Mix the above ingredients together and shape into patties. Place in baking dish.

Sauce:

1/4 cup chopped onions

1 cup catsup

1/4 cup water

2 tbsp brown sugar

1/2 tsp salt

1/2 tsp pepper

1 tbsp vinegar

2 tbsp Worcestershire sauce

1/2 tsp mustard

Mix sauce ingredients together and pour over the patties.

Bake at 350 degrees for around 20 to 30 minutes, until hamburgers reach your desired doneness.

SUPER HERO SANDWICHES

Loaf of French bread, cut in half lengthwise

Margarine
3 tbsp mayonnaise
10 slices boiled ham
10 slices deli roast beef
10 slices salami
10 slices American cheese
10 slices Swiss cheese
3 tbsp French dressing
2 tomatoes, sliced thin
6 to 8 lettuce leaves
1 cup creamy coleslaw, optional

Spread the cut side of the bread halves with margarine. Spread mayonnaise on one half of the bread and the French dressing on the other half. Line bottom half of bread with lettuce leaves. Layer the meats and cheeses atop the lettuce. Top meats and cheeses with the slaw, if using. Add top half of the bread. Cut into 4 equal pieces, securing each with a long toothpick. Remove toothpicks before eating.

SOUTHWESTERN SLOPPY JOES


2 lbs lean ground beef
1 tsp minced onion
1 jar (16-oz) your favorite salsa
1 pkg (1 1/4-oz) taco seasoning mix
1 can (4-oz) corn taco shells, break into bite-size pieces
8 buns or rolls for serving

In a medium to large nonstick skillet over medium-high heat, brown the ground beef until no longer pink; drain well and wipe skillet with a paper towel.  Return meat to skillet.

Stir the minced onion, salsa, and taco seasoning into the meat and bring to a boil.  Reduce heat and simmer for 1 hour or until the mixture is thick and bubbly; stir occasionally.

Before serving, stir in the taco shell pieces.  Place meat mixture on buns and top with your favorite condiments.

EASY FRENCH DIP

4 lb rump roast

1 can (10.5-oz) beef broth
1 can (10.5-oz) condensed French onion soup
1 can (12-oz) beer (optional)
6 French Rolls
2 tbsp butter

Trim excess fat from roast; throw away fat and place roast in a slow cooker. Add broth, onion soup and beer (may substitute extra broth if not using beer).

Set cooker on low setting and cook for 7 hours.

To serve:

Preheat oven to 350 degrees.

Split rolls and spread with the butter. Bake 10 minutes until heated through.

Slice roast on the diagonal and place on the rolls.

Serve with the sauce remaining in the cooker, for dipping.

OLD FASHION HEARTY MUSHROOM BURGERS

1 lb extra lean ground beef

1/2 cup fresh bread crumbs
1/2 cup fresh mushrooms, chopped
Dash of garlic powder
2 tsp Worcestershire sauce
Salt and pepper to taste
1 small onion, chopped

Combine all ingredients and mix well. Shape into 4 patties. Grill or fry until meat reaches desired doneness. Serve on a bun with your favorite condiments.

MARINE WIVES TANGY PORK BARBECUE

This recipe is from a 1950s Marine Officers' Wives cookbook.

2 tablespoons butter or margarine
3 tablespoons all-purpose flour
1 bottle (28-oz) ketchup
2 cups boiling water
1/4 cup vinegar
1/4 cup Worcestershire sauce
1 medium onion, chopped
1 garlic clove, minced
2 teaspoons chili powder
1 teaspoon salt, optional
1 teaspoon ground mustard
1/8 teaspoon cayenne pepper
1 boneless pork loin roast (3 1/2 to 4 pounds)
12 sandwich buns, split

In a Dutch oven over medium heat, melt butter. Stir in flour until smooth. Add the next 10 ingredients; bring to a boil. Add roast. Reduce heat; cover and simmer 3 hours or until the meat is very tender. Remove meat; shred with two forks or a pastry blender. Skim fat from cooking juices; return meat to juices and heat through. Serve with a slotted spoon on buns.

AUTHOR JANETTE OKE'S TOMATO CHEESE SPREAD

1/2 can tomato soup (2/3 cup)
1/2 cup shredded American cheese
1/2 tsp dry mustard
1/4 tsp instant minced onion

Cook ingredients over moderate heat, stirring constantly until cheese is melted. Chill. Serve as sandwich filling or cracker dip. Makes 1 cup.

Delight Your Family with this Old Fashion Meal

This internet article was first published in August 2010 and will be archived in the morning.  Sharing it with you before I bury it in the archives!

Surprise and delight your family with this meal made entirely from vintage recipes. From a refreshing 7-UP gelatin salad to Honey BBQ Shredded Pork Sandwiches to a finish of Buttermilk Pound Cake served with fresh berries, this is a meal that will get rave reviews! Make this an old-fashion (to some people) dinner with the family all together around the table. Enjoy a great meal and some wonderful conversation.

BECKY'S 7-UP SALAD
1 pkg (4 serving size) lime gelatin
2 cups boiling water
8 oz cream cheese
2 cups 7-UP
1 cup crushed pineapple, drained
1/2 cup chopped pecans
1 cup miniature marshmallows
Dissolve the gelatin in the boiling water until all gelatin is dissolved. Add the cream cheese and stir until melted. Add the 7-UP, stir and refrigerate. When the mixture is partially set, fold in the pineapple, pecans, and marshmallows. Return to the refrigerator until completely set. This makes a pretty molded salad.

BUTTERMILK POUND CAKE
3 sticks margarine
2 1/2 cups sugar
4 eggs
1/2 tsp soda
1/2 tsp salt
3 1/2 cups flour
1 cup buttermilk
1 tsp lemon flavoring
1 tsp vanilla extract
fresh berries for serving, if desired
Cream margarine and sugar until light; add eggs, 1 at a time, mixing well after each addition. Mix the soda, salt, and flour together well. add flour mixture to the creamed mixture alternately with the buttermilk. Stir in the lemon flavoring and vanilla extract. Pour batter into a lightly greased and floured tube pan. Bake at 325 degrees for 1 hour and 15 minutes. Serve topped with fresh berries, if desired.

PIGS IN A BISCUIT BLANKET

Another old recipe from Southern Indiana.

1 pkg hot dogs
4 slices cheese
1 can biscuits

Preheat oven to 425 degrees.

Slice each hot dog lenthwise without cutting all the way through.  Place a half slice of cheese inside each of the hot dogs.  Wrap biscuits around the hot dogs and bake 8 to 12 minutes.

BAKED HAMBURGERS WITH SAUCE

This is another old recipe from my childhood. My cousin used to make these and I though they were the best hamburgers ever!

2 lbs ground beef
1 tsp salt
1/2 tsp pepper
4 tbsp brown sugar
1 tsp dry mustard
4 tbsp vinegar
1/2 cup water
1/2 cup ketchup
1/2 cup chopped onion

Combine the salt and pepper with the ground beef in a large bowl, mixing in well. Form the mixture into patties and place in a large baking pan or dish.
In a small bowl, combine the brown sugar, mustard, vinegar, water, ketchup, and onion. Stir with a whisk to combine well. Pour the mixture over the patties.

Bake in a 350 degree oven for 45 minutes.
