4 cups all-purpose flour
1 1/2 cups sugar
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon baking soda
2 cups cranberries, washed, picked over, cut in halves
1 cup walnuts or pecans, chopped
2 teaspoons grated orange rind
2 eggs, beaten
1 1/2 cups orange juice
1/2 cup vegetable oil
Sift together dry ingredients. Stir in the cranberries, nuts and orange rind. Combine eggs, orange juice and vegetable oil. Stir into the dry ingredients just until moistened. Divide the batter into 3 lightly greased and floured 7 1;2 x 3 1/2 x 3 1/4-inch loaf pans. Bake in a preheated 356-degree oven for 45 to 60 minutes or until done.
