3 acorn squash
3 tart red apples
1 cup broken cashew nuts
1/2 cup maple syrup
1/4 cup butter, melted + more for brushing
Preheat oven to 400 degrees.
Wash squash and cut in half lengthwise. Scoop out seeds and stringy substance.
Wash core and dice unpared apples. Combine apples with the remaining ingredients. Fill the squash halves evenly with the apple mixture. Brush the surface with additional melted butter.
Place squash in a baking dish and pour in 1/2-inch depth of boiling water. Cover dish with foil and bake at 400 degrees 45 minutes. Remove foil and bake another 10 minutes. Test squash with a fork to be sure it is tender.
Yield: 6 servings
