SOUR CREAM CORN MUFFINS

1/2 cup all-purpose flour

1/2 cup cornmeal

3 tbsp sugar

1/2 tsp baking soda

1/2 tsp salt

1 egg

1 cup (8-oz) sour cream

Combine the flour, cornmeal, sugar, baking soda and salt in a bowl. In a small bowl, beat the egg and sour cream together. Stir the egg mixture into the dry mixture just till moistened. Fill 8 lightly greased muffin cups 2/3 full and bake at 400-degrees 15-18 minutes or until a wooden toothpick inserted in the center comes out clean.
