SPRING FRUIT SALAD

 1 can (11-oz) mandarin oranges, drained

1 cup flaked coconut, toasted

1 cup miniature marshmallows

1 can (8-oz) pineapple tidbits, drained

1 cup (8-oz) sour cream 

1 tbsp chopped walnuts

1 tbsp brown sugar

Fresh mint for garnish, optional

In a bowl, combine the first 5 ingredients, mix well. Cover and refrigerate overnight. Just before serving, sprinkle with the walnuts and brown sugar. Garnish with the mint, if using.

Yield: 6 servings
