This recipe is from an old rural utilities co-op newsletter in Southern Indiana where we got our electricity when I was a kid. There was always a page of recipes from the locals. This is one of them from Switz City, Indiana. I have no idea who Aunt Mamie was.
This blog is for the posting of Vintage Recipes. I have inherited recipes from both my grandmothers, mother, aunts, etc over the years. I am also a cookbook collector with several old cookbooks in my possession. My goal here is to share with you older recipes that have been lost to many. AUNT MAMIE'S CHICKEN BAKE
1 small chicken, cooked and boned
12 slices bread
2 cups chicken broth
2 eggs
2 cans chicken noodle soup
2 cans cream of mushroom soup
2 cups cracker crumbs
1 stick melted margarine
Mix the first six ingredients and put in a large pan. Mix cracker crumbs with margarine and put over top of chicken mixture. Bake at 350 degrees F for 45 minutes.
