This recipe is from my sister who used to make this for large family gatherings. Perhaps she still does but since I live well over a thousand miles away, I wouldn't know. My oldest daughter Cindy locked herself in my bedroom and ate a whole bag of circus peanuts when she was 3 years old. She refuses to even taste this salad!
30 circus peanuts (10-oz pkg)
1 large box orange jello
1 #2 can crushed pineapple
1 large Cool Whip
Dissolve jello in 2 cups boiling water. Add peanuts and stir until they melt. Drain pineapple, saving juice. Add water to the juice to make 1 1/2 cups; add to the jello mixture. Let stand until partially set. Add the pineapple and cool whip. Refrigerate.

PEPPY POTATO SALAD
This recipe is from the 1967 Better Homes and Gardens cooking with HERBS and SPICES cookbooklet I have featured several times. Love the name, never before thought of potato salad as peppy!

OATMEAL MUFFINS
This recipe from my 1955 Marshall Township PTA cookbook was submitted by Brenda Kay Luallen.
1 cup sifted enriched flour
1/4 cup sugar
3 tsp. baking powder
1/2 tsp. salt
3 tbsp. shortening
1 cup oats
1 egg, beaten
1 cup milk
Sift together flour, sugar, baking powder and salt. Cut in shortening until mixture resembles corn meal. Add rolled oats, blending thoroughly. Add beaten eggs and milk, stirring lightly. Fill greased muffin pans 2/3 full. Bake in a hot oven 425 degrees about 15 minutes. Makes 16 small muffins.

COFFEE-RUM COOKIES
This is another of the cookie recipes from the little 1970 Cookie Cookbook I found in my late mother's recipe boxes.
2 cups sifted flour
2 tablespoons instant coffee
1/2 teaspoon baking powder
1/8 teaspoon baking soda
1/2 teaspoon salt
1/3 cup shortening, soft
1/3 cup butter or margarine
1/2 cup firmly packed brown sugar
1/3 cup sugar
1 egg, well beaten
1 teaspoon imitation rum flavoring (or vanilla extract)
Sift first 5 ingredients together. Cream the shortenings together, adding the sugars while creaming. Add egg and extract; beat until light and fluffy. Blend in dry ingredients. Wrap dough in moisture-vaporproof material; chill thoroughly. Roll out a small amount of dough at a time on lightly floured surface to 1/8-in. thickness. Cut with fluted cookie cutter. Decorate round with pecan halves, if desired. Place on ungreased cookie sheet and bake at 400 degrees for 8 to 10 min. Makes about 3 doz. cookies.
