PERSIMMON COOKIES

This recipe is on the back of an old political card my late mother probably picked up during a local county councilman election back in Lawrence County, Indiana.  From the picture on the other side of this card I am guessing it is from the 1960s or 70s.

I foraged a small amount of persimmons yesterday and had enough pulp to make a half batch of cookies. I used pecans for the nuts. The cookies are good...a "cakie" style cookie, though, that doesn't spread out much when it cooks; so I flattened the second tray of cookies with the back of a wet spoon before baking. That tray was even better. My kids aren't into the raisins and nuts, so I think of these as more of an adult cookie...definitely has a nostalgic flavor!Thanks for the recipe!

I love this so much!! I have a collection of my Grandma's recipes and I will be making he persimmon pudding for Thanksgiving. Most of the recipes say "Oleo" so I appreciate the fact you have left all of her words the same.
